VINEGAR HELPS ACHIEVE PERFECT POACHED EGGS
We’re often told to add a splash of white wine vinegar to the water when poaching eggs in order to help set the white. Vinegar does have some effect in this case, but the best way to ensure you have nicely rounded poachers is to look for the freshest eggs. As eggs get older, the composition of the whites changes and becomes more liquid. A fresh egg white will form a neat little parcel around the yolk.
