Amanda’s purée de châtaignes (chestnut purée)

My French belle-mère (mother-in-law) has given me several chestnut recipes, but the best is her rich purée, to be served alongside turkey or veal on Christmas Eve. In France, chestnuts are synonymous with the season – many of which are grown in the Ardèche, a hilly region between Lyon and Marseille.
