Clarificat­ion: Akara recipe

Good Food subscriber Yinka Ojuri, who is of Nigerian descent, has asked us to clarify that TV personalit­y Big Zuu’s recipe for akara (West African doughnuts) featured in the Cookbook Challenge in our September 2021 issue is not traditiona­lly made with bananas, but with beans (either brown beans or black-eyed peas).

Magazines editor Keith Kendrick says, ‘Recipes in the book are inspired by Big Zuu’s mother, who is from Sierra Leone, and the article should have explained that this version was Big Zuu’s mother’s unique recipe.’ In his book, Big Zuu states that this is, ‘an African dish that differs from place to place. I’m giving you a version of my mum’s recipe. Everyone has a different recipe, this is mine’.
