OPENING OYSTERS

Oysters are at their best in winter, and as they don’t require cooking, an impressive but easy addition to a dinner party. To

‘shuck’ an oyster, hold it in a folded tea towel against a surface with the pointed hinge of the shell exposed. Insert a pointed shucking knife in the hinge (pic A) and wiggle it until the shell loosens, then draw the knife against the top of the flat shell to release it (pic B) and run the knife around the rounded shell to loosen the oyster (pic C). Avoid any oysters that are already open, appear dried out once shucked or smell rancid.
