THE KING OF CAKES
The 6 January is the day of the Epiphany (also known as Three Kings Day), when the Three Wise Men visited the baby Jesus. This was traditionally celebrated in England with an Epiphany tart – actually more like a jam-filled pie with intricate pastry designs on top. But now the bake most associated with it is the French galette des rois (cake of kings), where a buttery, almond, frangipane filling is sandwiched between two circles of puff pastry. Like sixpence in a Christmas pudding, a small charm is traditionally put into the bake, and the person who finds it is king for the day.
