My daughter is allergic to nuts. What’s a good substitute for ground almonds? Nicky Sizeland

A great substitute in cakes would be semolina. It still retains that gritty, nutty texture without the nuts. When using semolina, make sure you have some sort of syrup for the cake to soak in all the flavour.

What’s your all-time favourite comfort food dish? Stacy Morrison

It would have to be jacket potatoes – the simplicity of a piping hot baked potato, seasoned well with lots of butter and grated cheddar.

Have you ever lost your cooking mojo? If so, what are easy dishes to rely on to feed your family until the passion returns? Julia Vegh

I always struggle near the end of the year for inspiratio­n, so I keep it simple with easy chicken curries, masala omelettes and lots of chips.

I’m making an effort to waste less food this year and would like to be efficient with my shopping – how do you do it? Laura Wyatt

I know exactly what I’m cooking Monday to Thursday, then Friday is Fridge Raid Day to make use of all the last bits. Saturday is a hearty scrap-soup dinner using leftover root veg from the freezer. Then, on Sunday, we eat jacket potatoes. Consistenc­y is key!

It would have to be mustard oil, Lao Gan Ma, olive oil, cardamom, cinnamon, bay leaves, cumin seeds, chilli, and panch pooran (Bengali five-spice).

If you could invite any person, dead or alive, for dinner who would they be and what’s on the menu? Julie Seaborne

I would invite my paternal grandad.

I was really close to him and lived in Bangladesh for a year helping him on his farm. He passed away before I learned to cook or bake, so it would be a joy to bake him a cake, because it’s something that he hadn’t eaten before.
