STINGING NETTLES
Given their abundance and how versatile they are, nettles are an underused food in British kitchens. Gather them using gloves between February and June, choosing nettles away from the roadside. The young shoots and smaller leaves are best. Wash and strip the leaves from the stalks and cook before eating – they can then be used just as you would spinach, but have a lavour more like cabbage.
