Strawberri­es & cream cheesecake jars

Blitz 200g shortbread biscuits to crumbs in a food processor and divide between eight jars. Whisk 200g full-fat soft cheese with 200ml double cream, 5 tbsp icing sugar and 2 tsp vanilla extract until softly whipped. Hull and halve 500g strawberri­es. Tip half the berries into a bowl with 1 tbsp icing sugar and crush with a fork. Ripple the fruit through the whipped cream and divide between the jars. Top with the remaining berries and seal the jars.
