CHIPOTLE & LIME

Whisk 2 tbsp chipotle paste with the juice of 2 limes and 80ml light olive oil. Will keep chilled for a week.

EASY VINAIGRETT­E

Slowly whisk 100ml olive oil into 1 tbsp Dijon mustard. Gradually mix in 2 tbsp white wine vinegar and 1 tsp water to make a creamy dressing. Season with a small pinch of sugar and large pinch of salt. Will keep in a sealed jar for up to a month. Whisk again to serve.

GREEN OLIVE & HERB

SERVES 8 PREP 5 mins NO COOK EASY V

Finely chop 50g pitted green olives. Mix with a large handful of flat-leaf parsley, chopped, and a large handfulof mint, leaves chopped. Drizzle in enough olive oil to bind together. Add 1 tsp red wine vinegar, a small pinch of golden caster sugar and a pinch of salt. Will keep chilled for a day.
