Roast potatoes

Heat the oven to 220C/200C fan/gas 7. Cut 900g peeled floury potatoes like Maris Piper into two-three even-sized pieces. Put in a pan of well-salted water, bring to the boil, and cook for 7 mins until softened but still slightly hard in the centre. Drain, leave to steam-dry, then return to the pan, cover with a lid and shake gently. Heat a layer of sunflower oil in a large roasting tin, add the potatoes and turn to coat. Drain o‡ any excess oil and roast at the top of the oven, turning halfway, for 1 hr, until golden.
