Waldorf salad chicory bites
MAKES 16 20 PREP 15 mins NO COOK EASY V
2 heads of chicory (we used red) 1 green apple, cored and
inely chopped
1 celery stick, inely chopped small handful of walnuts,
roughly chopped
6 red grapes, inely chopped 2 tbsp natural yogurt
½ lemon, juiced
1 tsp Dijon mustard
50g crumbly blue cheese or
vegetarian alternative
Trim the root o each head of chicory and pull apart the individual leaves (you should get 16-20 leaves). Lay the leaves out on a large serving platter (see tip below).
2 Combine the apple pieces, celery, walnuts, grapes, yogurt, lemon juice and mustard in a bowl, and season well. Spoon a little of the filling into each of the chicory leaves towards the root end, leaving the leafy end to act as a handle. Crumble over the blue cheese and serve.
