Caramelise­d onions Heat 2 tbsp olive oil in a large, deep frying pan over a low heat and cook 3 sliced large onions with a pinch of salt for 30•40 mins, stirring occasional­ly until soft and golden. Add a splash of water if they start to catch. Stir in 2 tbsp light brown soft sugar and 12 tbsp balsamic vinegar and cook for 5 mins more until the onions are sticky and sweet.

Onion rings Slice 1 onion into 1cm-wide rings. Mix 150g self-raising ƒlour with 180ml sparkling water and season well. Fill a pan onethird full with groundnut oil and heat to 180C, or until a little batter sizzles and turns golden within 30 seconds. Dip the onion rings into the batter and carefully lower into the oil. Fry for 2•3 mins until golden. Remove with a slotted spoon and drain on kitchen paper. Season. Repeat until all the onions have been fried. Cheese & onion pork chops Heat the grill to high. Put 4 pork chops on a grill tray, rub with 2 tsp olive oil and season. Grill for 6 mins on each side until golden. Spread ¼ tsp English mustard and 1 tbsp

caramelise­d onions over each chop, then divide 50g grated cheshire cheese between them and scatter with thyme leaves. Grill until the topping is golden and bubbly.
