Golden syrup broccoli noodles


Add some golden syrup, a bit of garlic and chilli, a touch of sesame oil and soy sauce, and you’ve got an explosion of flavour in this dish. It’s the perfect, quick-to-make vegan supper.

SERVES 1 PREP 2 mins COOK 5 mins EASY V

1 dried wholemeal noodle nest 3 long-stemmed broccoli

2 tbsp sesame oil

1 garlic clove, crushed pinch of chilli lakes

1 tbsp golden syrup

1 tbsp soy sauce

¼ lime (save the rest for another recipe)

Bring a pan of salted water to the boil and cook the noodles following pack instructio­ns.

Meanwhile, pan-fry the broccoli in 1 tbsp sesame oil for a couple of minutes over a high heat, then add the crushed garlic and chilli flakes. Fry for a further minute or two, then add the golden syrup, soy sauce, the remaining 1 tbsp of sesame oil, a squeeze of lime juice, some cracked black pepper, and 1 tbsp of the cooking water from the noodles. Simmer for a couple of minutes, then drain the noodles, add to the pan, stir and serve.
