Turkey-feta burgers with spiced pineapple

1 brown onion 500g turkey mince 1 Tbsp Worcesters­hire sauce 2 Tbsp smoky

barbecue sauce 2 free-range eggs ¼ cup breadcrumb­s Sea-salt flakes and freshly ground black pepper, to season ¼ cup feta, crumbled 2 Tbsp extra virgin olive oil ½ cup roasted red

capsicum strips 4 slices cheddar cheese 4 rings fresh or

canned pineapple 2 tsp Cajun seasoning Burger buns, lettuce, red onion, tomato, pickles, mustard and crinkle cut crisps, to serve

1 Grate onion coarsely into a bowl and discard liquid. Add mince, sauces, eggs and breadcrumb­s. Season generously then knead for 3 minutes or until mixture is sticky. Mix in feta. 2 Form mixture into 4 patties. Heat oil in a large non-stick frying pan or on a barbecue grill plate over a medium-high heat. Cook patties for 2 minutes each side. Put capsicum strips and cheese on top and cook for 3 more minutes. 3 Meanwhile, dust pineapple with Cajun seasoning. Cook in pan or on barbecue for 1 minute each side or until lightly charred. 4 Fill buns with lettuce, red onion and tomato. Top with a pattie, pineapple ring, pickles and mustard. Serve with crisps and more pickles on the side.
