GRILLED ROCKMELON AND STRAWBERRIES WITH GRAND MARNIER

Serves 4
½ rockmelon, peeled, cut into 8 wedges
Cooking oil spray
500g strawberries, hulled, halved lengthways
2 Tbsp pure icing sugar
2 Tbsp caster sugar
Juice of 1 orange 125ml
Grand Marnier
300ml double cream Almond wafers and chopped pistachios, to serve
STEP 1 Spray rockmelon wedges with cooking oil spray. Preheat a barbecue grill on mediumhigh. Cook rockmelon wedges for 1 min on each side, until lightly blackened. Set aside.
STEP 2 Wash strawberries, place in a medium bowl. Add icing sugar while still wet and toss to combine. Transfer to a large metal sieve then set over the grill. Cook for 5 mins, until lightly softened.
STEP 3 Put the caster sugar in a medium saucepan and cook over a high heat for
2 mins, until caramelised.
Add orange juice and simmer until the caramel melts. Add Grand Marnier and half the cream. Simmer for 1 min until thickened slightly.
STEP 4 Pour the sauce into shallow bowls, top with rockmelon and strawberries. Serve with almond wafers, pistachios and remaining cream.
