The ultimate cool-season veg, spinach is grown in autumn and winter – it goes to seed in the heat. Spinach needs room, so space plants and rows 30-40cm apart. Sow in clumps of 2-3 seeds, directly where it’s to be grown. When seedlings emerge in 7-21 days, thin the clumps to the strongest. A fast grower, you’ll be harvesting in 8-10 weeks and can make successive sowings every 3-4 weeks for a continuous supply. You can pick leaves when very small, called baby spinach, allowing the plant to keep on growing for further harvests.
