The ul­ti­mate cool-sea­son veg, spinach is grown in au­tumn and win­ter – it goes to seed in the heat. Spinach needs room, so space plants and rows 30-40cm apart. Sow in clumps of 2-3 seeds, di­rectly where it’s to be grown. When seedlings emerge in 7-21 days, thin the clumps to the strong­est. A fast grower, you’ll be har­vest­ing in 8-10 weeks and can make suc­ces­sive sow­ings every 3-4 weeks for a con­tin­u­ous sup­ply. You can pick leaves when very small, called baby spinach, al­low­ing the plant to keep on grow­ing for fur­ther har­vests.
