Swap sweet potato for swede, parsnip, pota­toes or turnip.

Swap thyme for rose­mary, oregano or tar­ragon.

If you don’t need the soup to be strictly veg­e­tar­ian, use chicken stock in­stead for added flavour.

Try stir­ring through a hand­ful of baby spinach leaves at the end of the cook­ing time to add an ex­tra burst of flavour, colour and nu­tri­ents.
