Salted ap­ple frit­ters with maple syrup and al­monds

Bat­tered, deep-fried and served with cream, this dessert is def­i­nitely a guilty plea­sure!

Prepa­ra­tion time 20 mins plus 20 mins stand­ing Cook­ing time 15 mins Makes 20

4 large Golden De­li­cious ap­ples,

peeled, cored, sliced into 3mm rings ¼ cup caster su­gar

60ml brandy

5 grates fresh nut­meg Veg­etable oil, for deep-fry­ing Plain flour, to dust Ic­ing su­gar mix­ture, to dust Sea-salt flakes, to sea­son 100ml maple syrup Toasted flaked al­monds, to serve Vanilla ice-cream and/or

dou­ble cream, to serve

BAT­TER

2 free-range eggs

125g caster su­gar 130ml milk

60ml ex­tra vir­gin olive oil 3 pinches ground cloves 200g plain flour

50g tapi­oca flour or corn­flour 1½ tsp bak­ing pow­der

STEP 1 Put ap­ple rings in a bowl and sprin­kle with caster su­gar, brandy and nut­meg. Toss and al­low to stand at room tem­per­a­ture for 20 min­utes.

STEP 2 Mean­while, to make bat­ter, whisk eggs, caster su­gar, milk, oil and cloves in a large bowl un­til com­bined.

STEP 3 Sift in flours and bak­ing pow­der. Whisk to form a bat­ter, then stand for 20 min­utes (if bat­ter is too thick, add a splash more milk).

STEP 4 Pour oil into a large deep saucepan un­til 5cm deep. Heat to 180°C on a cook’s ther­mome­ter, or un­til a bread cube turns golden in 30 sec­onds.

STEP 5 Dust ap­ple rings, one at a time, in flour, shak­ing off ex­cess. Dip into bat­ter to coat, then shake off ex­cess.

STEP 6 Deep-fry ap­ple rings in batches for 2-3 min­utes or un­til golden and ten­der. Drain on kitchen pa­per and dust with ic­ing su­gar and sea­son with a lit­tle salt.

STEP 7 Ar­range ap­ple frit­ters on a serv­ing plate, driz­zle with maple syrup and sprin­kle over al­monds. Serve with ice-cream and/or cream.
