AMAZ­ING AS MUFFINS TOO!

Who doesn’t love car­rot cake? Hardly any­one. And who doesn’t love a muf­fin? Even fewer any­ones! And who doesn’t love a car­rot cake muf­fin? No one! So when we looked at our fea­ture on page 132, we thought our muffins were in­deed cover wor­thy. And de­spite the fact we orig­i­nally served them nude, we fig­ured they needed a lit­tle dress­ing for the cover. So we left off the raw su­gar be­fore bak­ing, smoth­ered them in frost­ing, nuts and (store-bought) caramel sauce. Oh my! You’ll find the frost­ing recipe on page 135, then over to you how you de­vour them!

Yes please cream cheese!

So easy, serve them di­vinely frosted or just as they come from the oven and you’ll be in car­rot-cake heaven.
