AMAZING AS MUFFINS TOO!
Who doesn’t love carrot cake? Hardly anyone. And who doesn’t love a muffin? Even fewer anyones! And who doesn’t love a carrot cake muffin? No one! So when we looked at our feature on page 132, we thought our muffins were indeed cover worthy. And despite the fact we originally served them nude, we figured they needed a little dressing for the cover. So we left off the raw sugar before baking, smothered them in frosting, nuts and (store-bought) caramel sauce. Oh my! You’ll find the frosting recipe on page 135, then over to you how you devour them!
