TROP­I­CAL FRUIT SALAD

Prepa­ra­tion time 10 mins Cook­ing time nil Serves 6

2 yel­low peaches, stoned,

cut into wedges

2 white nec­tarines stoned,

cut into wedges

2 cups cher­ries

½ fresh pineap­ple, peeled,

cut into wedges

2 Tbsp caster sugar

2 tsp vanilla ex­tract 125g pun­net rasp­ber­ries 125g pun­net blue­ber­ries ¼ cup mint leaves, torn,

plus ex­tra to gar­nish Pulp of 4 pas­sion­fruit

STEP 1 Toss fruit, sugar and vanilla in a large bowl. Set aside for 5 min­utes to al­low flavours to in­fuse. STEP 2 Add berries and mint; toss again. Driz­zle over pas­sion­fruit pulp. Serve gar­nished with ex­tra mint.
