BOSCH PERFECT ROAST HERB AND LEMON TURKEY
125g butter, chopped, softened 1 clove garlic, crushed
¼ cup finely chopped flat-leaf
parsley leaves
1 Tbsp finely chopped sage
leaves, plus extra 10 sprigs 1 Tbsp finely chopped chives 2 Tbsp thyme leaves, plus extra
10 sprigs, and extra to garnish 1 Tbsp finely grated lemon zest Sea-salt flakes and freshly ground
black pepper, to season
4kg whole turkey
4 fresh bay leaves, plus
extra to garnish
1 lemon, quartered, plus
extra wedges to garnish Gravy, to serve
STEP 1 Combine butter, garlic, herbs and zest in a bowl. Season and mix well.
STEP 2 Gently slide your fingers under skin of turkey breasts to carefully loosen it from the flesh without tearing the skin. Push butter mixture under skin.
STEP 3 Put bay leaves, extra sage, extra thyme and lemon into turkey cavity. Truss legs closed with kitchen twine.
STEP 4 Line Bosch Universal Pan with baking paper; sit wire rack on top. Put turkey on rack, breast side up. Insert Perfectroast meat probe into thickest part of breast from the shoulder as far as it will go.
STEP 5 Preheat Bosch Added Steam oven on 4D Hotair setting to 160°C.
STEP 6 Put pan on shelf level two of oven. Insert meat thermometer into oven socket; set core temperature to 84°C and steam level to 3. Once turkey reaches core temperature, oven will stop heating and turn off. Remove turkey from oven and rest.
STEP 7 Garnish with extra thyme, bay leaves and lemon. Serve with gravy.
