BOSCH PERFECT ROAST HERB AND LEMON TURKEY

125g butter, chopped, softened 1 clove garlic, crushed

¼ cup finely chopped flat-leaf

parsley leaves

1 Tbsp finely chopped sage

leaves, plus extra 10 sprigs 1 Tbsp finely chopped chives 2 Tbsp thyme leaves, plus extra

10 sprigs, and extra to garnish 1 Tbsp finely grated lemon zest Sea-salt flakes and freshly ground

black pepper, to season

4kg whole turkey

4 fresh bay leaves, plus

extra to garnish

1 lemon, quartered, plus

extra wedges to garnish Gravy, to serve

STEP 1 Combine butter, garlic, herbs and zest in a bowl. Season and mix well.

STEP 2 Gently slide your fingers under skin of turkey breasts to carefully loosen it from the flesh without tearing the skin. Push butter mixture under skin.

STEP 3 Put bay leaves, extra sage, extra thyme and lemon into turkey cavity. Truss legs closed with kitchen twine.

STEP 4 Line Bosch Universal Pan with baking paper; sit wire rack on top. Put turkey on rack, breast side up. Insert Perfectroa­st meat probe into thickest part of breast from the shoulder as far as it will go.

STEP 5 Preheat Bosch Added Steam oven on 4D Hotair setting to 160°C.

STEP 6 Put pan on shelf level two of oven. Insert meat thermomete­r into oven socket; set core temperatur­e to 84°C and steam level to 3. Once turkey reaches core temperatur­e, oven will stop heating and turn off. Remove turkey from oven and rest.

STEP 7 Garnish with extra thyme, bay leaves and lemon. Serve with gravy.
