Caramelised strawberry and orange rosé coolers
Rich and sweet caramelised fresh fruit takes this cocktail to new flavour heights.
Preparation time 10 mins plus 25 mins cooling Cooking time 20 mins Serves 8
2 small oranges, peeled,
thinly sliced
250g punnet strawberries,
hulled, halved
2 Tbsp caster sugar
Ice cubes, to serve 100ml Grand Marnier
2 x 750ml bottles rosé, chilled Basil leaves, to garnish
STEP 1 Preheat oven to 200°C fan-forced (220°C conventional). Put orange slices and strawberries in a medium baking dish so they slightly overlap. Sprinkle with sugar and bake for about 18 minutes or until fruit is lightly caramelised around the edge of the dish. Gently stir, then set aside for 5 minutes before chilling for 25 minutes. STEP 2 Divide mixture between 8 wine glasses, gently muddle, put in a few cubes of ice and pour in Grand Mariner. Top up with rosé, garnish with basil and serve.
