Pink grapefruit, thyme and vodka fizz
The botanical flavour of thyme is a great match for the sweet and sour grapefruit. Give it a try!
Preparation time 10 mins plus 1 hour cooling Cooking time 10 mins Serves 6
250ml water
1 cup caster sugar
10 sprigs thyme, plus
extra to garnish 12 blackberries, frozen 180ml vodka
3 x 375ml bottles sparkling
grapefruit drink Grapefruit slices, to garnish
STEP 1 Put water and sugar in a medium saucepan and heat over medium heat, stirring, until sugar is dissolved. Add thyme and bring to the boil. Remove from heat and allow to cool.
STEP 2 Pour 1 tablespoon thyme syrup into 6 stemless wine glasses. Add blackberries, then evenly pour vodka and grapefruit drink over the top. STEP 3 Thread a toothpick through grapefruit slices and place on top of glasses. Garnish with extra thyme sprigs.
