Trop­i­cal wine slushie

A drink for the adults who are big kids at heart, this beauty fea­tures the flavours of peach, pineap­ple and co­conut rum – yum!

Prepa­ra­tion time 10 mins plus overnight freez­ing Cook­ing time nil

Serves 6

2 fresh peaches, stoned, roughly chopped

200ml co­conut-flavoured rum 1 cup roughly chopped pineap­ple, plus ex­tra 6 long thin wedges to gar­nish 750ml white wine

(we used pinot gris) Gre­na­dine, to serve Pineap­ple fronds, to dec­o­rate

STEP 1 Put peaches and rum in a blender and blitz un­til pureed. Add pineap­ple and process again. Pour into a large zip-lock bag, add wine, ex­pel air and seal. Freeze for 8 hours or overnight.

STEP 2 Just be­fore serv­ing, re­turn mix­ture to blender and process un­til smooth.

STEP 3 Pour into 6 high­ball glasses and drop a few drops of gre­na­dine on top.

STEP 4 Gar­nish with pineap­ple wedges and dec­o­rate with fronds. Serve im­me­di­ately with a thick straw.
