Tropical wine slushie
A drink for the adults who are big kids at heart, this beauty features the flavours of peach, pineapple and coconut rum – yum!
Preparation time 10 mins plus overnight freezing Cooking time nil
Serves 6
2 fresh peaches, stoned, roughly chopped
200ml coconut-flavoured rum 1 cup roughly chopped pineapple, plus extra 6 long thin wedges to garnish 750ml white wine
(we used pinot gris) Grenadine, to serve Pineapple fronds, to decorate
STEP 1 Put peaches and rum in a blender and blitz until pureed. Add pineapple and process again. Pour into a large zip-lock bag, add wine, expel air and seal. Freeze for 8 hours or overnight.
STEP 2 Just before serving, return mixture to blender and process until smooth.
STEP 3 Pour into 6 highball glasses and drop a few drops of grenadine on top.
STEP 4 Garnish with pineapple wedges and decorate with fronds. Serve immediately with a thick straw.
