ELDERFLOWER, LIME AND MINT SPRITZ

250ml clear apple juice, chilled 100ml elderflower cordial, chilled Juice of 1 lime

¼ cup mint leaves, plus

extra sprigs, to garnish ¼ cup mint leaves, plus

extra sprigs, to garnish 750ml bottle prosecco, chilled Edible flowers, to garnish

STEP 1 Combine apple juice, cordial, lime juice and mint in a jug.

STEP 2 Divide juice mixture among 8 champagne flutes. Top with prosecco until glasses are full. Garnish with extra mint and edible flowers. Serve.
