Prepa­ra­tion time 30 mins plus 1 hour stand­ing Cook­ing time 55 mins Serves 12

500ml milk, plus ex­tra 500ml 5 free-range eggs

1 tsp vanilla bean paste,

plus ex­tra 1 tsp

1 cup plain flour

½ tsp cream of tar­tar Cook­ing oil spray, to grease 100g caster sugar

50g corn­flour

500g pit­ted cher­ries, halved Juice of 2 limes

500g jam-set­ting sugar Fresh cher­ries, mini meringues, choco­late shav­ings and baby mint leaves, to gar­nish

STEP 1 Com­bine milk, 3 of the eggs and vanilla in a large bowl and whisk un­til smooth. Sift flour and cream of tar­tar to­gether over a large bowl, then sift into milk mix­ture and whisk un­til smooth. Set aside for at least 1 hour. STEP 2 Put a crepe pan over medium heat and grease with cook­ing oil spray. Once heated, la­dle in ¼ cup bat­ter, swirling to coat bot­tom of pan. Cook for 1 minute, flip, then cook for a fur­ther 30 sec­onds. Set aside on bak­ing pa­per, then re­peat with the re­main­ing bat­ter to make 12 crepes. STEP 3 Whisk re­main­ing eggs with the caster sugar, corn­flour and ex­tra vanilla paste. Put ex­tra milk in a small saucepan and set over high heat. Bring to a boil, then whisk into egg mix­ture. Re­turn to saucepan and place over mod­er­ate heat. Whisk con­stantly un­til thick­ened and smooth. Trans­fer to a bowl, cover with cling film and set aside to cool. STEP 4 Com­bine pit­ted cher­ries and lime juice in a medium saucepan and set over medium heat. Cook for 20 min­utes, un­til cher­ries have be­gun to break down. Add jam­set­ting sugar, then boil rapidly for 5 min­utes. Trans­fer to a glass bowl and set aside to cool. Fold gen­tly into cus­tard to cre­ate a swirled ef­fect. STEP 5 Place a crepe on a serv­ing plat­ter, then top with a gen­er­ous spoon of the cus­tard mix­ture and spread evenly. Re­peat with re­main­ing crepes and cus­tard mix­ture to form a stack. Gar­nish with fresh cher­ries, mini meringues, choco­late shav­ings and baby mint leaves.
