NO-BAKE CHRISTMAS CHERRY CAKE
Preparation time 30 mins plus 1 hour standing Cooking time 55 mins Serves 12
500ml milk, plus extra 500ml 5 free-range eggs
1 tsp vanilla bean paste,
plus extra 1 tsp
1 cup plain flour
½ tsp cream of tartar Cooking oil spray, to grease 100g caster sugar
500g pitted cherries, halved Juice of 2 limes
500g jam-setting sugar Fresh cherries, mini meringues, chocolate shavings and baby mint leaves, to garnish
STEP 1 Combine milk, 3 of the eggs and vanilla in a large bowl and whisk until smooth. Sift flour and cream of tartar together over a large bowl, then sift into milk mixture and whisk until smooth. Set aside for at least 1 hour. STEP 2 Put a crepe pan over medium heat and grease with cooking oil spray. Once heated, ladle in ¼ cup batter, swirling to coat bottom of pan. Cook for 1 minute, flip, then cook for a further 30 seconds. Set aside on baking paper, then repeat with the remaining batter to make 12 crepes. STEP 3 Whisk remaining eggs with the caster sugar, cornflour and extra vanilla paste. Put extra milk in a small saucepan and set over high heat. Bring to a boil, then whisk into egg mixture. Return to saucepan and place over moderate heat. Whisk constantly until thickened and smooth. Transfer to a bowl, cover with cling film and set aside to cool. STEP 4 Combine pitted cherries and lime juice in a medium saucepan and set over medium heat. Cook for 20 minutes, until cherries have begun to break down. Add jamsetting sugar, then boil rapidly for 5 minutes. Transfer to a glass bowl and set aside to cool. Fold gently into custard to create a swirled effect. STEP 5 Place a crepe on a serving platter, then top with a generous spoon of the custard mixture and spread evenly. Repeat with remaining crepes and custard mixture to form a stack. Garnish with fresh cherries, mini meringues, chocolate shavings and baby mint leaves.
