Prepa­ra­tion time 15 mins Cook­ing time 20 mins Serves 8–10

½ cup nat­u­ral al­monds

½ cup sun­flower ker­nels

½ cup pepi­tas

2 Tbsp chia seeds

30g parme­san, roughly chopped ½ tsp dried oregano

½ tsp smoked pa­prika

3 Tbsp ex­tra vir­gin olive oil 1 free-range egg, lightly beaten ½ tsp bak­ing pow­der Sea-salt flakes, to sea­son

STEP 1 Pre­heat oven to 160°C fan-forced (180°C con­ven­tional).

STEP 2 Place al­monds, sun­flower ker­nels, pepi­tas, chia, parme­san, oregano and pa­prika in the bowl of a food pro­ces­sor.

STEP 3 Pulse un­til al­monds and parme­san are finely chopped.

STEP 4 Add oil, egg and bak­ing pow­der and pulse again un­til mix­ture comes to­gether.

STEP 5 Spoon half of the mix­ture onto a large sheet of bak­ing pa­per and par­tially flat­ten it out into a rec­tan­gle us­ing your hands.

STEP 6 Top with a sec­ond sheet of bak­ing pa­per and use a rolling pin to roll mix­ture out flat, to about 4mm thick.

STEP 7 Care­fully trans­fer to a large oven tray, re­move top sheet of bak­ing pa­per and re­peat with re­main­ing mix­ture. Sea­son with salt. Bake for 20 min­utes or un­til golden. Cool com­pletely on trays. STEP 8 Snap into crack­ers. Serve.
