SEEDY NUTTY CRACKERS

½ cup natural almonds

½ cup sunflower kernels

½ cup pepitas

2 Tbsp chia seeds

30g parmesan, roughly chopped ½ tsp dried oregano

½ tsp smoked paprika

3 Tbsp extra virgin olive oil 1 free-range egg, lightly beaten ½ tsp baking powder Sea-salt flakes, to season

STEP 1 Preheat oven to 160°C fan-forced (180°C convention­al).

STEP 2 Place almonds, sunflower kernels, pepitas, chia, parmesan, oregano and paprika in the bowl of a food processor.

STEP 3 Pulse until almonds and parmesan are finely chopped.

STEP 4 Add oil, egg and baking powder and pulse again until mixture comes together.

STEP 5 Spoon half of the mixture onto a large sheet of baking paper and partially flatten it out into a rectangle using your hands.

STEP 6 Top with a second sheet of baking paper and use a rolling pin to roll mixture out flat, to about 4mm thick.

STEP 7 Carefully transfer to a large oven tray, remove top sheet of baking paper and repeat with remaining mixture. Season with salt. Bake for 20 minutes or until golden. Cool completely on trays. STEP 8 Snap into crackers. Serve.
