ZUCCHINI PIZZA
Preparation time 20 mins Cooking time 30 mins Makes 1
1½ cups coarsely grated zucchini
(you’ll need 1 medium zucchini) ½ tsp sea-salt flakes
¼ cup quick cook oats
1 free-range egg, lightly beaten 1 Tbsp chia seeds
1 Tbsp finely grated parmesan ½ tsp dried Italian herbs
2 Tbsp pizza sauce or tomato paste
1/3 cup shredded mozzarella
¼ cup pitted kalamata olives Extra virgin olive oil, to drizzle Basil leaves, to garnish
STEP 1 Preheat oven to 180°C fanforced (200°C conventional). Line an oven tray with baking paper. STEP 2 Combine zucchini and salt in a sieve over a large bowl.
Set aside for 10 minutes.
STEP 3 Meanwhile, in a large bowl, combine oats, egg, chia, parmesan and herbs. Mix until well combined, then set aside for 5 minutes.
STEP 4 Use your hands to squeeze out any remaining liquid from zucchini.
STEP 5 Stir the zucchini into the oat mixture.
STEP 6 Spoon mixture onto prepared tray and use your hands to spread mixture to form a 23cm circle. Bake for 20 minutes or until golden brown around the edge.
STEP 7 Remove pizza base from oven, then flip base over. Spread with pizza sauce and scatter with mozzarella and olives. Return to oven for 7 minutes or until cheese has melted.
STEP 8 Transfer to a serving board or plate, drizzle with oil and garnish with basil. Serve immediately.
