KNOCKOUT BOXING DAY ROAST PORK SAMBO
Preparation time 10 mins Cooking time 5 mins Serves 2
1 Tbsp extra virgin
olive oil
6 thin slices leftover cold cooked pork roast meat, with crackling 1 green shallot,
finely sliced
4 pieces leftover thickcut square white bread, toasted
2 Tbsp leftover caramelised onion chutney ½ mango, finely diced ½ avocado,
finely diced ½ long red chilli, seeded,
finely chopped
2 Tbsp sour cream Coriander, to garnish Lime wedges, to serve
STEP 1 Heat oil in a large frying pan over medium-high heat. Add pork meat and shallot and cook, stirring, for 4 minutes or until heated through. Set aside.
STEP 2 Spread 2 slices of toast with chutney and top with hot pork mixture, then top with mango, avocado and chilli. Dollop with sour cream and garnish with coriander. Serve with crackling, lime wedges and remaining toast.
