1½ cups self-rais­ing flour, sifted 375ml but­ter­milk

2 free-range eggs

¼ cup caster sugar

3 Tbsp un­salted but­ter, melted 2 tsp vanilla essence

1 Tbsp plain flour

Red food colour­ing, to tint 2 Tbsp co­coa pow­der

¼ cup milk

Cook­ing oil spray, to grease Whipped cream, strawberry

jam and syrup, to serve

STEP 1 Put self-rais­ing flour, but­ter­milk, eggs, sugar, but­ter and vanilla in a large bowl. Whisk un­til smooth. Put 2 ta­ble­spoons bat­ter aside in a small bowl and mix with plain flour

to thicken, then tint with red food colour­ing. Mix co­coa pow­der and milk to make a paste. Trans­fer each mix to a pip­ing bag, fit­ted with a small noz­zle. STEP 2 Grease 12cm in­di­vid­ual pan­cake pans (see Cook’s tip) with oil, then set over medium-low heat. Pipe red and co­coa paste to make emoji faces, then spoon bat­ter over top. Cook gently un­til just set, then flip and cook for 2 min­utes more. Serve with jam, syrup and cream.
