PRAWN, FETA AND WA­TER­MELON SALAD

Prepa­ra­tion time 20 mins Cook­ing time nil Serves 4

1 medium red onion, finely sliced 2 red chill­ies, finely sliced, seeds in 3 Tbsp sumac

Juice of ½ lemon

60ml ex­tra vir­gin olive oil Sea-salt flakes and freshly

ground black pep­per

12 large cooked prawns, peeled,

heads off and tails on

¼ seed­less wa­ter­melon

150g firm feta

20 mint leaves

Lemon wedges, to serve

STEP 1 Mix onion, chilli, half the sumac, lemon juice and oil in a large bowl. Sea­son. Toss prawns through. STEP 2 Slice wa­ter­melon into un­even wedges and lay on a serv­ing plat­ter. STEP 3 Top with slices of feta and the dressed prawns.

STEP 4 Pour over re­main­ing dress­ing from the prawn mix­ture, scat­ter with mint leaves, sprin­kle with re­main­ing sumac and serve with lemon on the side.
