PRAWN, FETA AND WATERMELON SALAD
Preparation time 20 mins Cooking time nil Serves 4
1 medium red onion, finely sliced 2 red chillies, finely sliced, seeds in 3 Tbsp sumac
Juice of ½ lemon
60ml extra virgin olive oil Sea-salt flakes and freshly
ground black pepper
12 large cooked prawns, peeled,
heads off and tails on
¼ seedless watermelon
150g firm feta
20 mint leaves
Lemon wedges, to serve
STEP 1 Mix onion, chilli, half the sumac, lemon juice and oil in a large bowl. Season. Toss prawns through. STEP 2 Slice watermelon into uneven wedges and lay on a serving platter. STEP 3 Top with slices of feta and the dressed prawns.
STEP 4 Pour over remaining dressing from the prawn mixture, scatter with mint leaves, sprinkle with remaining sumac and serve with lemon on the side.
