Beaut brekkie nachos
You’ll love these fun brekkie nachos with spicy chorizo tomato sauce, runny fried eggs, melted cheese and tasty radish salsa – yum!
Preparation time 10 mins Cooking time 30 mins Serves 4
2 Tbsp extra virgin olive oil
2 chorizo sausages, finely diced
1 brown onion, finely diced
8 cloves garlic, minced
1 long green chilli, finely diced
1 Tbsp smoked paprika
2 tsp ground cumin
1 tsp ground coriander seeds
2 x 400g cans cherry tomatoes
Juice of 2 limes
1 Tbsp honey
Sea-salt flakes and freshly
ground black pepper
4 cups plain tortilla chips
1 cup feta, crumbled
1 cup Red Leicester cheese,
grated
4 free-range eggs
1 bunch radish, trimmed,
thinly sliced
1/4 cup chopped coriander leaves Lime wedges, to serve
STEP 1 Heat olive oil in a medium saucepan over medium heat. Cook chorizo, onion and garlic, stirring, for 5 minutes, until softened. Mix in green chilli and spices, then cook, stirring, for 2 minutes more.
STEP 2 Add tomatoes, lime juice and honey, then season generously with salt and pepper. Simmer for 20 minutes, until reduced and thickened.
STEP 3 Arrange tortilla chips and tomato mixture in individual (10cm) skillets or ovenproof dishes. Scatter with cheeses, then cook on low heat for 3 minutes until cheese melts.
STEP 4 Meanwhile, heat an oiled frying pan on medium heat. Fry eggs sunny side up. Combine radish and coriander in a bowl. Put eggs on top of nachos. Serve nachos with radish salsa and lime wedges on the side.
