Wow, what a project! In fact, what a pair of projects for you to make, to see out the last of winter! The best pork roast you’ve ever served to the troops. And the most delightful throw to impress them even more. Or you might just love them both because they are truly extraordinary and you don’t give a fig about looking good to anyone – you just want the joy yourself! Good idea.
But back to the pork just for a minute. Mastering the art of making crazy fabulous crackling is right up there with one of the greatest cooking abilities you can have. In fact, Fast Ed, our wonderful and clever TV presenter chef, says, along with being asked a recipe for the simplest chocolate cake ever, how to make good crackling is equally requested pretty much everywhere he goes. I use his crackling tip every time and by golly it works a treat. Not very much of an organised cook, I don’t work ahead as often as I should but am preparing a recipe at the last minute. So Fast Ed’s tip of scoring the skin, pouring boiling water over it, then drying it like mad (see tip box, above), makes my crackling a whopping event every time I bring it to the table. Aha, but now I am going to give our rolled pork a go and you know what, I can’t wait. Is it not the yummiest thing you have ever seen? Maybe my new signature dish!
