Wow, what a project! In fact, what a pair of projects for you to make, to see out the last of win­ter! The best pork roast you’ve ever served to the troops. And the most de­light­ful throw to impress them even more. Or you might just love them both be­cause they are truly ex­tra­or­di­nary and you don’t give a fig about look­ing good to any­one – you just want the joy your­self! Good idea.

But back to the pork just for a minute. Mas­ter­ing the art of mak­ing crazy fab­u­lous crack­ling is right up there with one of the great­est cook­ing abil­i­ties you can have. In fact, Fast Ed, our won­der­ful and clever TV pre­sen­ter chef, says, along with be­ing asked a recipe for the sim­plest choco­late cake ever, how to make good crack­ling is equally re­quested pretty much every­where he goes. I use his crack­ling tip ev­ery time and by golly it works a treat. Not very much of an or­gan­ised cook, I don’t work ahead as of­ten as I should but am pre­par­ing a recipe at the last minute. So Fast Ed’s tip of scor­ing the skin, pour­ing boil­ing wa­ter over it, then dry­ing it like mad (see tip box, above), makes my crack­ling a whop­ping event ev­ery time I bring it to the ta­ble. Aha, but now I am go­ing to give our rolled pork a go and you know what, I can’t wait. Is it not the yum­mi­est thing you have ever seen? Maybe my new sig­na­ture dish!

But most of all, go tour­ing through our ex­cit­ing, in­spi­ra­tional and to­tally in­for­ma­tive big kitchen spe­cial (pg 20) and see if you don’t want to up­date, ren­o­vate or just damn dec­o­rate right now. Bury your­self in the de­tails and you’ll find even more you’ll want to do. And there are tons of other ideas to de­light you as well. What a crack­ing good is­sue, so get crack­ling and en­joy!
