Make your own al­mond meal by re­mov­ing skin from nat­u­ral al­monds (soak in boil­ing wa­ter for a few min­utes, and skin will pop off) or by us­ing blanched al­monds. For added flavour, toast them for a few min­utes in a dry fry­ing pan or in the oven un­til lightly golden. Grind them in a food pro­ces­sor with 1 ta­ble­spoon of the flour from the recipe.
