RUBY RED GRAPE­FRUIT MAR­GARITA

1 ruby red grape­fruit

50ml tequila

20ml agave syrup

20ml fresh lime juice, plus ex­tra,

to serve

10ml egg white

Pink Hi­malayan salt, to serve Pey­chaud’s or An­gos­tura bitters

STEP 1 Re­move skin and pith of grape­fruit, and mud­dle in a cock­tail shaker.

STEP 2 Pour in tequila, agave syrup, lime juice, egg white and a few ice cubes. Shake vig­or­ously.

STEP 3 Dip rim of a mar­tini glass in ex­tra lime juice and pink Hi­malayan salt. Dou­ble-strain mix into glass. Top with a line of bitters. Make a wave pat­tern with a tooth­pick.
