Prepa­ra­tion time 15 mins Cook­ing time nil Serves 4

2 man­goes

250g spread­able cream cheese 100g ic­ing su­gar, sifted

Juice of 1 lime

1 tsp vanilla ex­tract

150ml cream, whipped

125g gin­ger­nut bis­cuits, crushed Shaved co­conut, finely sliced kaf­fir

lime leaves, to gar­nish (op­tional)

STEP 1 Peel 1 mango and cut flesh from seed. Place flesh in a jug and puree us­ing a stick blender.

STEP 2 Com­bine cream cheese, ic­ing su­gar, lime juice and vanilla in a large bowl. Whisk un­til very smooth. Fold in whipped cream.

STEP 3 Di­vide half the bis­cuit crumbs be­tween four 300ml serv­ing glasses. Spoon cream cheese mix­ture into a pip­ing bag then pipe a 1cm layer on each bis­cuit base. Top with mango puree. Re­peat lay­ers of bis­cuit, cream cheese mix­ture and mango.

STEP 4 Peel and dice re­main­ing mango then scat­ter over cheese­cake mix­ture in glasses. Top with shaved co­conut to gar­nish and scat­ter with kaf­fir lime leaves, if us­ing, to serve.
