INDIVIDUAL LAYERED MANGO CHEESECAKES

250g spreadable cream cheese 100g icing sugar, sifted
Juice of 1 lime
1 tsp vanilla extract
150ml cream, whipped
125g gingernut biscuits, crushed Shaved coconut, finely sliced kaffir
lime leaves, to garnish (optional)
STEP 1 Peel 1 mango and cut flesh from seed. Place flesh in a jug and puree using a stick blender.
STEP 2 Combine cream cheese, icing sugar, lime juice and vanilla in a large bowl. Whisk until very smooth. Fold in whipped cream.
STEP 3 Divide half the biscuit crumbs between four 300ml serving glasses. Spoon cream cheese mixture into a piping bag then pipe a 1cm layer on each biscuit base. Top with mango puree. Repeat layers of biscuit, cream cheese mixture and mango.
STEP 4 Peel and dice remaining mango then scatter over cheesecake mixture in glasses. Top with shaved coconut to garnish and scatter with kaffir lime leaves, if using, to serve.
