• Tuscan kale, or cavalo nero, is a thin, dark-green Italian variety. It has a be er flavour with less bitterness than traditional kale. You’ll find it in almost all green grocers and supermarkets.

• Za’atar is a traditional spice mix from the Middle East. You can find it in all supermarkets.
