BAKED RISONI WITH HARISSA PRAWNS
Preparation time 5 mins Cooking time 25 mins Serves 2
1 Tbsp extra virgin olive oil 1 small onion, finely chopped 1 clove garlic, sliced 250g cherry tomatoes
100g risoni
1 cup vegetable stock
1/ Tbsp harissa paste
100g kale, sliced
/ small bunch dill, chopped 400g raw peeled prawns
1 lemon, / juiced, / cut into wedges 2 tsp soy sauce
Sea-salt flakes and freshly ground black pepper, to season
STEP 1 Preheat oven to 160C fan-forced (180C conventional). Heat olive oil in an ovenproof frying pan on medium. Saute onion for 5 minutes, or until so and lightly golden. Add garlic and fry for 30 seconds, then stir in tomatoes with a splash of water. Simmer for 5 minutes, or until tomatoes start to burst and turn saucy.
STEP 2 Stir risoni, stock, 1 Tbsp of the harissa paste, kale and half of the dill into the tomato mixture, then bring to a simmer. Bake, uncovered, for 8-10 minutes, or until risoni is just tender and liquid has been absorbed. Toss prawns with remaining harissa, lemon juice and soy sauce.
STEP 3 Scaer prawns over risoni and bake for another 5 minutes, or until prawns are pink and cooked through. Season. Serve with remaining dill and lemon wedges.
