GRILLED FISH SANDWICH

2 Tbsp extra virgin olive oil 2 x 180g fish fillets 4 slices bread of your choice Butter leaf lettuce, sliced red chilli and watercress sprigs, to serve 3 radishes, finely sliced, to serve Lemon wedges, to serve
TARTARE SAUCE
1 1/2 cups mayonnaise 10 cornichons, finely sliced
2 Tbsp baby capers
1 1/2 Tbsp finely chopped dill
2 Tbsp finely chopped flat-leaf
parsley leaves
Sea-salt flakes and freshly ground
black pepper, to season Squeeze of lemon, to taste
STEP 1 For tartare sauce, combine all ingredients in a bowl and set aside.
STEP 2 Heat oil in a frying or griddle pan on high. Cook fish for 2 minutes on each side, until cooked through.
STEP 3 Top 2 pieces of bread with leuce, fish, radish, chilli and watercress, then drizzle with tartare sauce. Top with remaining bread slices. Serve sandwiches with lemon wedges.
