THAI STYLE FISH AND VEG SALAD
Preparation time 5 mins Cooking time 10 mins Serves 4
350g fresh stir-fry vegetables mix 4 x 125g pieces skinless, firm
white fish fillets
/ cup Thai-style salad dressing 1 cup coriander leaves
/ cup roasted unsalted peanuts,
roughly chopped, to serve
STEP 1 Heat 2 Tbsp vegetable oil in a wok or frying pan on high. Stir-fry vegies for 3-4 minutes, tossing, until tender. Remove from wok. Set aside. STEP 2 In the same wok, cook fish for 2-3 minutes on each side, until just cooked through.
STEP 3 Serve vegetables drizzled with salad dressing, topped with fish, coriander and peanuts.
