ROASTED ZUCCHINI FLOWER AND TOMATO PASTA
Preparation time 15 mins Cooking time 15 mins Serves 4
12 zucchini flowers
500g heirloom cherry tomatoes,
halved if large
400g spaghei
6 cloves garlic, sliced
/ cup finely grated parmesan,
plus extra, to serve
STEP 1 Preheat oven to 160°C fan-forced (180°C conventional).
STEP 2 Remove stamen from inside of flowers and discard. Toss flowers with tomatoes and / cup olive oil. Season. Transfer to an oven tray. Bake for 10 minutes, until tender.
STEP 3 Meanwhile, cook spaghei in a large saucepan of boiling salted water until al dente. Drain.
STEP 4 Heat 2 Tbsp olive oil in pan. Cook garlic for 2 minutes, until golden.
STEP 5 Add pasta, roasted vegetable mixture and parmesan. Toss over low heat, until well combined. Serve with extra parmesan.
