TOMATO AND OLIVE PASTA

Preparatio­n time 10 mins Cooking time 10 mins Serves 4 /† cup extra virgin olive oil 8 cloves garlic, sliced

2 sprigs rosemary leaves, finely

chopped

2 x 400g cans whole peeled tomatoes,

no added salt, drained Freshly ground black pepper

2 tsp brown sugar

400g wholewheat spiral pasta

/ cup black olives, chopped

4 cups spinach leaves

/ bunch basil leaves

STEP 1 Put oil in a large pan and cook garlic and rosemary on medium heat for 5 minutes, until just beginning to colour. Crush tomatoes, mix in and simmer for 5 minutes. Season with pepper and stir in brown sugar.

STEP 2 Meanwhile, cook pasta, drain well and add to sauce with chopped olives, spinach and basil.
