MISO-GLAZED PORK SKEWERS AND NOODLE SALAD

2 Tbsp white miso paste

1/2 cup dark honey

Juice of 1 lemon

1 Tbsp rice vinegar

1 tsp garlic powder

4cm piece ginger, finely grated Sea-salt flakes and freshly ground

white pepper, to season

800g pork fillet, cubed

3 x 180g packets soba noodles

2 tsp sesame oil

4 green shallots, finely sliced 2 carrots, grated

1 red onion, very finely sliced Cooking oil spray

Japanese mayonnaise, sesame seeds

and lime wedges, to serve

STEP 1 Mix miso, honey, lemon, vinegar, garlic and ginger in a bowl. Season. Toss with pork, thread onto skewers and set aside for 20 minutes. STEP 2 Meanwhile, pour boiling water on noodles, drain well and drizzle with oil. Toss with shallot, carrot and onion. STEP 3 Spray skewers with cooking oil, then cook on a hot ribbed griddle pan for 10 minutes, turning often, until firm. Divide noodle salad between serving bowls. Top with skewers, mayo and sesame seeds and serve with lime.
