LYCHEE MARTINI

560g can lychees in syrup, plus fresh
lychees, to serve
2 cups vodka
Ice cubes
Edible gold leaf, to decorate
STEP 1 Drain lychees and reserve syrup. STEP 2 In a cocktail shaker, use a rolling pin or muddler to crush lychees, until bruised. Add 2/3 cup reserved syrup, vodka and enough ice to almost fill. Shake until shaker feels ice cold.
STEP 3 Carefully open and strain liquid into chilled martini glasses. Top with fresh lychees on toothpicks, decorated with gold leaf.
