PINEAPPLE AND MINT MOJITO

Preparatio­n time 15 mins Cooking time 15 mins Makes 8 8 thick semicircul­ar slices pineapple 1/4 cup brown sugar 2 cups mint leaves, plus extra sprigs, to garnish 4 limes, cut into wedges Crushed ice 1 cup white rum 4 cups ginger beer 4 cups pineapple juice

STEP 1 Coat pineapple slices in brown sugar. Cook in a hot frying pan over high heat for 3 minutes on each side, until caramelise­d. Cool.

STEP 2 Meanwhile, put mint and lime in a large jug. Using a cocktail muddler or a rolling pin, pound until juice and flavour are released.

STEP 3 Fill glasses 2/3 with ice. Add 1/4 cup mint and lime mixture to each glass and top up with rum, ginger beer and juice. Garnish with pineapple and mint.
