CHOPPED HERB, TOMATO AND CUCUMBER SALAD

Serves 6
300g vine-ripened tomatoes, roughly
chopped into small cubes 200g cucumber, roughly chopped
into small cubes
12/3 cups chopped flat-leaf parsley 1 cup leafy greens (here, rocket and
baby red sorrel)
Garlicky tahini parsley sauce (see page 84), or vinaigrette of your choice, to serve
STEP 1 Toss all the ingredients together and dress lightly with Garlicky tahini parsley sauce or vinaigrette. Serve.
