CLASSIC ANZAC BISCUITS
Preparation time 10 mins Cooking time 40 mins Makes 28 11/4 cups plain flour 1 cup rolled oats 1 cup desiccated coconut 3/4 cup caster sugar 1/4 cup brown sugar 125g unsalted butter, chopped 2 Tbsp golden syrup 2 Tbsp hot water 1 tsp bicarbonate of soda
STEP 1 Preheat oven to 150°C fan-forced (170°C conventional). Line 4 oven trays with baking paper.
Combine flour, oats, coconut and sugars in a large bowl.
STEP 2 Put butter, golden syrup and hot water in a small saucepan over medium heat. Stir occasionally until butter has melted. Stir bicarb into syrup mixture and remove from heat.
STEP 3 Add warm syrup mixture to oat mixture. Stir until well combined.
STEP 4 Shape tablespoons of the mixture into 28 balls.
STEP 5 Arrange balls on prepared trays about 8cm apart. Press each ball lightly with a fork to flatten slightly.
STEP 6 Bake batches for 18-20 minutes, or until golden brown (for crispy bickies, bake 2-3 extra minutes). Cool on trays, then transfer to wire racks to fully cool.
Follow the same recipe for these variations, except where specified, using extra oven trays as needed.
CHOCOLATE-FILLED MINIS
Makes 50
Shape teaspoons of mixture into 100 balls in Step 4. Reduce baking time to 16 minutes a batch. In a medium bowl, combine 50g melted unsalted butter, 200g melted dark choc melts and 1/2 cup icing sugar mixture. Shape teaspoons of choc mix into 50 balls. Sandwich 1 ball between 2 cooled biscuits; repeat with remaining balls and biscuits.
COCONUT DREAMS
Makes 52
Add 1/2 cup shredded coconut in Step 1. Shape 2 teaspoons of mix each into 52 balls in Step 4. Reduce baking time to 16 minutes a batch.
MACADAMIA, LIME AND WHITE CHOC DELIGHTS
Makes 28
Add 1/2 cup salted roasted macadamias, roughly chopped, in Step 1. In Step 2, add finely grated zest of 1 lime when adding bicarb. Once cooked biscuits are cooled, dip a third of each biscuit into 200g melted white chocolate, then set aside on trays for chocolate to set.
CHOCOLATE FRECKLES
Makes 52
Shape 2 teaspoons of mix each into 52 balls in Step 4. At end of Step 5, press 1/3 cup candy-coated choc mini buttons into biscuit tops. Cut baking time to 16 minutes a batch.
HEALTHIER BICKIES
Makes 46
Swap out both of the sugars for 1/3 cup CSR Smart White Sugar Blend, increase hot water to
1/4 cup, omit butter and add
1/4 cup extra virgin olive oil. Roll 2 teaspoons of mixture each into 46 balls in Step 4. Reduce baking time to 16 minutes a batch.
