Peach chut­ney

Serves About 6 ster­ilised jars


2kg peaches, sliced from stone and roughly chopped

1 small green cap­sicum

1kg sugar

1 cup chopped dates

½ cup chopped ginger

2 tsp salt

1 heaped tsp cin­na­mon

½ tsp ground cloves

Grated rind of 1 le­mon


Boil in­gre­di­ents in a large saucepan. Re­duce heat and sim­mer un­cov­ered 1½-2 hours or un­til thick. Stir fre­quently. Check con­sis­tency (like jam) by cool­ing 1⁄2 tsp on chilled saucer. Pour into jars while still hot.
