Baked apples with citrus
Preparation: 10 minutes Cooking: 45 minutes Serves: 4
4 Fuji apples, cored 2 tsp orange rind 1⁄4 cup orange juice 1⁄4 cup sultanas 1⁄4 cup raisins 1 tsp cinnamon 1 tsp ground cardamom
Stand apples in an oiled shallow baking dish with a lid. In a bowl, combine orange rind, juice, sultanas, raisins and spices. Press this mixture into the hollow of each apple. Arrange apples into the baking dish. Add some water to cover the base of the dish. Cover and bake at 180C for 45 minutes. Serve warm with a drizzle of honey.
